The Wine & Truffle Co recently received the highest accolade from someone who knows truffles the world-over best. Commonly referred to as ‘the gourmet food and truffle pope’ of Germany, Ralf Boss was taken aback by the outstanding quality of truffles produced by The Wine & Truffle Co.
Boss commented, “In 20 years of dealing with truffles I have learned that there are only two varieties of truffles that you should use; black winter truffles from France, during the period January to March, and white truffles from Italy during the period from October to December.
“To illustrate the value of a truffle better, I have established a scale from one to ten. Ten is the highest rating. Of course, the white and black truffles are rated as ten on that scale - there is nothing better in the world. Summer truffles are rated as three on the scale, Burgundy truffles with four, Bianchetti also with four and Chinese truffles with one.
“Fifteen months ago I received the first delivery of Australian winter truffles from The Wine and Truffle Company of Manjimup. It was immediately clear to me that I was holding something very special in my hands. Today, after two Australian truffle seasons, I am certain that I need to expand the scale by half a point. Australian black truffles from Manjimup deserve to be rated on this scale with 10½. Therefore the months June to September are for me top truffle months”.
