Green Beans with Truffle & Almonds

| Ingredients |
- 20 g Almonds, slivered
- 120 g Beans stringless
- 20 g Truffled butter
- 0.25 pc Lemon each

- Top and tail the green beans and cut to size if necessary.
- Melt the butter on a low flame and add the almonds. Cook till the almonds are a light brown.
- When the almonds are the correct colour remove the pan from the heat and add the lemon juice.
- Place the beans into boiling salted water and cook till al dente.
- Drain the beans and arrange neatly on the plate. Coat with the almonds and butter. Serve hot.
N.B. The beans can be cooked al dente prior to service but must be refreshed in an ice water bath to retain colour and to stop the beans from cooking. They can then be reheated in boiling salted water immediately prior to service. |
